Vinification Method: Grapes are hand harvested and destemmed. The grapes are pressed and the juice ferments spontaneously in fiberglass tanks. The skins are removed after a short amount of time to limit the amount of extraction in the wine. The wine is racked once after alcoholic and malolactic fermentation complete, and goes back into tank for 6-8 months of elevage. The wine is bottled unfined and unfiltered with a small addition of sulfur at bottling.
